Red Velvet Cookies

I found myself with some eggs that will be expiring soon so I thought I'd spend the morning baking to try to use them up. This is the first of four posts from this morning's baking. My husband loves red velvet so I thought I'd make him red velvet cookies.

This were pretty easy to make. The dough does get a little tougher to work with closer to the end of mixing. Original recipe from Eating on a Dime.

Ingredients

1 box of Red Velvet Cake Mix cookies
2 eggs
1/3 cup of vegetable oil
Powdered sugar for the topping


Instructions

Preheat the oven to 375 degrees.
Mix everything except the powdered sugar into a bowl (Batter will be thick).
Spoon into balls and roll in the powdered sugar.
Place on cookie sheets leaving about 2 inches between cookies.
Bake for 8 to 10 minutes until cookies brown SLIGHTLY on the edges.
