Cake Batter Blondies

It's been over a month since my last post. My apologies! November kind of got away from me. I started a new job, which had a bit of an adjustment period but I am loving it thus far. It's nice to go back to a set schedule and for the first time in my adult life, I have weekends off! Very exciting.

Earlier this month, I found myself with a box of cake mix that was due to expire in the beginning of December. I didn't feel like making an actual cake so I took to Pinterest to find something else I could do with it. I came across a recipe for Cake Batter Blondies from Sally's Baking Addiction. Seemed simple enough and I had all the ingredients.


I chose to omit the white chocolate chips. I also used 1/3 cup of milk.

I used parchment paper. I find it a lot easier to get items like these out once they're done.


Easy to make and they taste pretty good too!


1 box yellow or vanilla cake mix
1/4 cup vegetable or canola oil
1 large egg
1/3 -1/2 cup milk (less is better)
1/2 cup sprinkles
1/2 cup white chocolate chips


Preheat oven to 350F degrees.
Spray 11x7 baking pan with nonstick spray.
Combine first four ingredients in a large bowl.
Add the milk slowly. You want to cake batter to be as dense & thick as possible.
Mix in the sprinkles and white chocolate chips.
Pour into prepared baking pan, sprinkle a few more sprinkles on top, and bake for 25-30 minutes until edges are just turning brown.
Allow to cool for at least 30 minutes so the center sets, before cutting into squares.
